Water: 1 TBS 5.2 Mash Stabilizer, 2 tsp gypsum
Grain: 7 lb. 8 oz. German Pilsner
3 lb. German Vienna
3 lb. 8 oz. German Munich
1 oz. American chocolate
Mash: 75% efficiency
Mash with 1.25 qts per pound for an hour at 155°, pull 2 qt decoction and add to 1 qt boiling water. Once boiling, stir back into mash and let rest for 10 minutes. Continuous sparge with 170° water to reach 7 gallons in brewpot.
Boil: 60 minutes SG 1.056 7.0 gallons
Follow hop schedule EXCEPT, of the listed aroma hops, dry hop with 1 oz Nugget and 1 oz Warrior

.5 oz. Warrior (16% AA, 30 min.)
.5 oz. Nugget (12% AA, 30 min.)
.5 oz. Tomahawk (16% AA, 15 min.)
.5 oz. Simcoe (13% AA, 15 min.)
.5 oz. Palisade (7.5% AA, 15 min.)
1 oz. Warrior (aroma)
.5 oz. Tomahawk (aroma)
.5 oz. Simcoe (aroma)
2.5 oz. Nugget (aroma)
Yeast: White labs 007 from previous batch
