HHIBC Ale

Got this recipe from the brew master at Hilton Head Brew Company, HHI, SC. Had to down size from 10 bbl. Brewed it twice already and just like I recall when I drank it there.

Type: All grain Size: 5.5 gallons
Color:
31 HCU (~16 SRM)
Bitterness: 36 IBU
OG: 1.050 FG: 1.010
Alcohol: 5.1% v/v (4.0% w/w)
Water: Spring fed PA water.
Grain: 6 lb. American 2-row
4 lb. American crystal 40L
1 lb. Dextrine malt (Cara-Pils)
Mash: 70% efficiency
30 min @ 120°
60 min @ 150°
Mash out at 160°
Sparge with 165° water to get 6.5 gal
Boil: 60 minutes SG 1.042 6.5 gallons
Irish Moss last 10 minutes
Hops: 2 oz. Liberty (4% AA, 30 min.)
2 oz. Cascade (6% AA, 10 min.)
1 oz. Cascade (aroma)
Yeast: German Ale #1007
Log: Primary 6 days @ 65°
Rack to carboy for 10 days @ 67°
bottle bucket for 3 days @ 67°
Carbonation: prime with 1/2 cup X-lite DME and 1/2 cup sorn sugar
Tasting: Good hop feel and aroma. Malt finish. Just like I remember at HHI.
