Major Hockstetter's Secret Reserve

Ya volt mine heir! This super secret recipe will hit your thirst like a JU-87 Stuka Dive Bomber. A thick and creamy off white head that sticks around. Assertively hopped yet well balanced, a rich and full malt flavor with some fruity esters that survived the lagering process, this is a session beer worthy of any "altstad" brewpub in Düsseldorf!

30 HCU (~15 SRM)
Bitterness: 44 IBU
OG: 1.056 FG: 1.012
Alcohol: 5.6% v/v (4.4% w/w)
Water: Tap
Grain: 6 lb. German Pilsner
1 lb. Wheat malt
2 lb. German Munich
1 lb. Dextrine malt (Cara-Pils)
4 oz. British chocolate
8 oz. Flaked barley
Mash: 70% efficiency
Mash in at 150 degrees for 60 min. mash out at 170 degrees
Boil: 60 minutes SG 1.043 6.5 gallons
Irish Moss @ 15 minutes to go in the boil
Hops: .5 oz. Spalt (6.75% AA, 60 min.)
.5 oz. Spalt (6.75% AA, 45 min.)
.5 oz. Spalt (6.75% AA, 30 min.)
.5 oz. Spalt (6.75% AA, 15 min.)
2.0 oz. Spalt (aroma)
Yeast: WLP036 Dusseldorf Alt Yeast
PLATINUM STRAIN – May/June
Traditional Alt yeast from Dusseldorf, Germany. Produces clean, slightly sweet alt beers. Does not accentuate hop flavor as WLP029 does.
Attenuation: 65-72%
Flocculation: Medium
Optimum Fermentation Temperature: 65-69°F
Alcohol Tolerance: Medium
Carbonation: 2.7 volumes Keg: 12.3 psi @ 36°F
