Altbier Mania

This is a non-traditional Altbier. After making a previous, traditional Alt, I decided to just get experimental.

Beer: Altbier Mania Style: Düsseldorf Altbier
Type: Extract w/grain Size: 6 gallons
Color:
16 HCU (~10 SRM)
Bitterness: 31 IBU
OG: 1.062 FG: 1.014
Alcohol: 6.1% v/v (4.8% w/w)
Water: use only Spring Water.
Grain: 1 lb. 6 oz. German Vienna
4 oz. German Munich
2 oz. Belgian chocolate
Steep: I steep the grains at 155° for 50 minutes. sparge with 1 quart of spring water
Boil: 60 minutes SG 1.185 2 gallons
2 lb. Light dry malt extract
6 lb. Wheat extract
12 oz. Honey
Add the honey at the last 3 minutes of the boil to retain the flavor. add one tablet of Whirlfoc-T at the same time as the honey.
Hops: 2 oz. Perle (8% AA, 60 min.)
2 oz. Spalt (6.75% AA, 45 min.)
2 oz. Hallertauer (4.25% AA, 15 min.)
Yeast: White Labs Platinum Series Dusseldorf Altbier Yeast.
