Summer Fun Blonde Ale

This should be ready around Labor Day.
My Blonde might like it.

Beer: Summer Fun Blonde Ale Style: Kölsch
Type: Extract w/grain Size: 5 gallons
Color:
5 HCU (~5 SRM)
Bitterness: 39 IBU
OG: 1.049 FG: 1.009
Alcohol: 5.1% v/v (4.0% w/w)
Water: Soft water - White Rock brand is very soft, Poland Spring less so.
Grain: 1 lb. American 2-row
8 oz. German Vienna
4 oz. American crystal 10L
4 oz. Dextrine malt (Cara-Pils)
Steep: 1 Gallon of Water.
Saccharification Rest at 150°F for 90 minutes.
Sparge/rinse with 1 gallon 165°-170° water.
Boil: 60 minutes SG 1.081 3 gallons
4 lb. Light dry malt extract
1 lb. Rice extract
Add Irish Moss for last 15 minutes of boil.
You can substitute DME for Rice Extract, if you
want to stay pure to the old German "Purity Law" that
only allowed water, malt, and hops in Bier formulation.
Hops: .25 oz. Hallertauer Hersbrucker (5% AA, 60 min.)
.25 oz. Hallertauer Mittelfruh (5% AA, 60 min.)
.25 oz. Spalt (6.75% AA, 60 min.)
.25 oz. Tettnanger (4.5% AA, 60 min.)
.25 oz. Hallertauer Hersbrucker (5% AA, 30 min.)
.25 oz. Hallertauer Mittelfruh (5% AA, 30 min.)
.25 oz. Spalt (6.75% AA, 30 min.)
.25 oz. Tettnanger (4.5% AA, 30 min.)
.25 oz. Hallertauer Hersbrucker (aroma)
.25 oz. Hallertauer Mittelfruh (aroma)
.25 oz. Tettnanger (aroma)
Yeast: Wyeast # 2565 Kolsch smack pack started 24 Hr before.
Log: Double knot the Aroma Hop Bag - transfer this bag ONLY to primary.
Primary for 5-10 days.
Rack to Secondary.
Transfer Aroma Hop Bag.
Add 1 tsp gelatin, dissolved in 1 pint water.
(or not, if you want to stay pure to the German Purity Law).
Haze is acceptable in Kolsch.
Allow 5 days for beer to clear/settle before bottling.
Carbonation: Prime with 3/4 cup sugar
or to keep in line with the German Purity Law,
use 1-1/4 cups M&F Extra Light DME.
Tasting: Allow to age at least 1 month in the bottles.
Serve cold at 45°-50°F
