Water: Water treated with 5.2 Mash Stabilizer.
Grain: 12 lb. 9 oz. British pale
3 lb. 8 oz. Wheat malt
2 lb. Dextrine malt (Cara-Pils)
Mash: 70% efficiency
Mashed 4.5 gallons of water at 1qt/lb ratio(water/grains), at 151°F for 75 mins. Sparged with 7.5 gallons of 170°F water, for 50 mins. O.G. 1.046
Boil: 60 minutes SG 1.043 11 gallons
Irish moss at 45 mins into boil.
Hops: 1 oz. Spalt (6.75% AA, 60 min.)
1 oz. Spalt (6.75% AA, 30 min.)
1 oz. Hallertauer Hersbrucker (aroma)
Yeast: White Labs 029 Kolsch.
