Kolsch by Gosh!

Getting back in the brew saddle after 2 years. Brewed this as a summertime quencher.

Brewer: St. Arnold Email: aarnold@excite.com
Beer: Kolsch by Gosh! Style: Kölsch
Type: Extract w/grain Size: 5 gallons
Color:
7 HCU (~6 SRM)
Bitterness: 25 IBU
OG: 1.046 FG: 1.008
Alcohol: 4.9% v/v (3.8% w/w)
Grain: 8 oz. American 2-row
Steep: Placed grain bag with grain in water and heated to 170°. Steeped grain 10 min and removed at 180°.
Boil: 60 minutes SG 1.038 6 gallons
6 lb. Light malt extract
Hops: 1.5 oz. Hallertauer (4.4% AA, 60 min.)
.5 oz. Tettnanger (aroma)
Yeast: White Labs # WLP029 Kolsch/German Ale
Log: Ferment at 68 deg. for 5 days. Rack to secondary, ferment for 6 days.
Carbonation: 2.7 volumes Corn Sugar: 4.72 oz. for 4.75 gallons @ 69°F
Tasting: Tried first bottle after 7 days, carbonation hadn't developed enough.
Waited another 5 days and tried second, carbonation improved. Nice clean beer, good crispness (due to the type of yeast used, I'm guessing.) Some residual sweetness from priming sugar that should go away in a few weeks. All in all, a success.
