Kolsch for My Buddy's

One of several beers I plan on having ready for June 2002 when my friends that moved to Las Vegas come back home, (to Pittsburgh), for a visit - (I'm bottling an APA tomorrow & brewing an American Brown next weekend). Might even have time to get two more batches ready before they get here - (they can drink)!!!!!

Beer: Kolsch for My Buddy's Style: Kölsch
Type: Extract w/grain Size: 5 gallons
Color:
10 HCU (~7 SRM)
Bitterness: 11 IBU
OG: 1.058 FG: 1.012
Alcohol: 5.9% v/v (4.7% w/w)
Water: 3 gallons Spring Water in the boil. Topped up carboy with distilled water.
Grain: 8.0 oz. American crystal 10L
Steep: Got it up to about 170°f & let it steep for 20 more minutes.
Boil: 60 minutes SG 1.097 3 gallons
4.00 lb. Light malt extract
3.00 lb. Light dry malt extract
4 oz. Dextrin in for all 60 minutes. Some Irish Moss at 20 minutes for clarity.
Hops: 0.5 oz. Northern Brewer (8.5% AA, 60 min.)
1 oz. Hallertauer (aroma)
Yeast: 1 pitchable vial of White Labs #WLP029 German Ale/Kolsch Yeast
Log: Brewed on 3/2/02. Pitched yeast at 68°f. Will keep it in the primary for 1 week, secondary for 1 week, then age in cool cellar, (approximately 62°f), until June. (Of course I'll test a few before then).
Carbonation: 4 or 5 oz. Corn sugar & bottle.
