Croquet Kolsch

I brew in 3 gallon batches due to space limitations.

Type: All grain Size: 2.75 gallons
Color:
4 HCU (~4 SRM)
Bitterness: 29 IBU
OG: 1.044 FG: 1.010
Alcohol: 4.4% v/v (3.5% w/w)
Water: Local water is quite hard
Grain: 2.5 lb. American 2-row
2 lb. Wheat malt
.5 lb. German Vienna
Mash: 65% efficiency
Single infusion of 10 qts at 158° for 75 min.
No mashout
Boil: 60 minutes SG 1.030 4.0 gallons
Hops: .5 oz. Hallertauer (4.8% AA, 30 min.)
.5 oz. Hallertauer (4.8% AA, 15 min.)
.5 oz. Saaz (3.5% AA, 15 min.)
.5 oz. Saaz (aroma)
Yeast: Used Wyeast 2565 without a starter.
Will use starter next time.
Log: Brewed during a warm spell in spring so fermentation temps got into
upper 70's for a day until I moved the fermenter into an airconditioned
room. No secondary. No lagering.
Carbonation: Bottle conditioned. Primed with 3/4cup DME. Moved to refrigerator
after 2 weeks at room temp.
Tasting: Tasted a bit grainy, harsh and thin going into the bottles, but after
6 weeks, 4 weeks in refrigerator, it's really tastey.
Nice kiss of hops in the body with a well balanced finish.
Everybody likes it except my 72yo Mother; she prefers stouts.
