Dough in w/1-1/2 qt per lb at 158°.
1 hr @ 150°.
10 min @ 168°.
Sparge w/approx 7-1/2 gal @ 168° to get 11-1/2 gal for boil.
Boil: 75 minutes SG 1.047 11.5 gallons
2 oz Hallertau @ beginning of boil.
1.75 oz Hallertau @ end for aroma & 1 tsp Irish Moss.
Hops: 2 oz. Hallertau (5.3% AA, 60 min.)
1.75 oz. Hallertau (5.3% AA, 15 min.)
Yeast: White Labs #WLP029 German Ale/Kolsch yeast.
Log: Pitched yeast @ 72.
Fermented @ 68° for 10 days.
Aged @ 45° for 3 weeks.
Carbonation: Forced w/CO2 in keg.
