Little Mikey's Kolsch

This is a very nice Kolsch that I designed in honor of my first son. This beer is nicely hopped and tasty. It also falls in the AHA guidelines for Kolsch. This beer tends to want to darken while boiling so you may shorten boil time a tad. All hops are hop pellets. Enjoy!

Color:
7 HCU (~5 SRM)
Bitterness: 28 IBU
OG: 1.048 FG: 1.010
Alcohol: 4.9% v/v (3.9% w/w)
Grain: 1 lb. American 2-row
8 oz. Wheat malt
12 oz. German Vienna
1 lb. Dextrine malt (Cara-Pils)
Steep: 2 tbsp. gypsum in 4.5 gallons of water, steep grains in bag in 150°
water for 30+ minutes. Rinse with 1.5 gallons of 170° water to make 6 gallons.
Boil: 60 minutes SG 1.040 6 gallons
3 lb. 12 oz. Light dry malt extract
12 oz. Rice extract
2 tbsp. irish moss, last 15 minutes
Hops: .38 oz. Perle (7% AA, 60 min.)
.38 oz. Spalt (4.9% AA, 45 min.)
.26 oz. Spalt (4.9% AA, 30 min.)
.38 oz. Spalt (4.9% AA, 15 min.)
.26 oz. Tettnanger (4.0% AA, 15 min.)
.5 oz. Perle (aroma)
.5 oz. Spalt (aroma)
.5 oz. Tettnanger (aroma)
Yeast: Wyeast #1007 works very well, or use Wyeast #2565
Carbonation: 2.5 volumes Corn Sugar: 4.26 oz. for 4.8 gallons @ 69°F
