Kolsch of the Vernal Equinox

Standard German Kolsch brewed on March 20, 2001 (hence the name) using Cascades in addition to Sterling, Saaz and Tettnanger for an American style twist.

Alcohol: 5.3% v/v (4.2% w/w)
Water: Hinkley and Schmidt Drinking Water
Grain: 5 lb. American 2-row
8 oz. American crystal 10L
1 lb. Dextrine malt (Cara-Pils)
8 oz. Raw wheat
Mash: 55% efficiency
Mashed ggrain for 45 minutes at 155 degrees and batch sparged 2 gallons of water at 155 degrees for 20 minutes.
Boil: 60 minutes SG 1.074 4 gallons
3 lb. Light malt extract
1 lb. 4 oz. Wheat extract
Hops: 1 oz. Tettnanger (4.5% AA, 45 min.)
1 oz. Saaz (6% AA, 30 min.)
1 oz. Cascade (6% AA, 15 min.)
1 oz. Saaz (6% AA, 15 min.)
Yeast: Wyeast German Kolsch Yeast with 2 pint starter
Log: Actually, first Saaz addition to hop schedule is actually Sterling at 6% AA. Program did not have this variety.
