"Fidelio" (rev.1806/14) (Op.72)

Named after the 200 year anniversary of Beethoven's only Opera
Alex's Cara-munich is a home roasted malt.
I blended some of this beer with a paler more acidic beer, will update with the results.

Alcohol: 5.2% v/v (4.1% w/w)
Water: very soft water used
Grain: 1kg NZ Organic pilsner
266g Alex's Cara-Munich
50g British chocolate
Mash: 60% efficiency
65¡¦until conversion
Boil: 60 minutes SG 1.063 13 liters
300g Home-made Candy Sugar
1.5kg Light malt extract
Hops: 20g NZ Fuggles (5.3% AA, 60 min.)
12g NZ Fuggles (5.3% AA, 15 min.)
Yeast: Safale yeast dried
Carbonation: 1tsp cane sugar per 745ml bottle
Tasting: A nice brown beer, this isnt a copy of liefmans, its a sweeter version with slightly tart edge from the fuggles - more like the one from Cnudde or Roman. The home-roasted Cara lends a licorice, caramel note which is very nice. The hops are balanced nicely also.
