Millenium Biere de garde

This is the second biere de garde that I have brewed. I wanted something amber and fruity and spicy to commemorate the new year.

21 HCU (~12 SRM)
Bitterness: 25 IBU
OG: 1.073 FG: 1.015
Alcohol: 7.5% v/v (5.9% w/w)
Water: Well water plus 1 tbs gypsum
Grain: 2 lb. Belgian Pilsner
.5 lb. Wheat malt
3 lb. German Vienna
4 lb. German Munich
.5 lb. Belgian aromatic
.5 lb. Dextrine malt (Cara-Pils)
1 lb. Belgian CaraVienne
1 lb. Belgian biscuit
Mash: 80% efficiency
step infusion:
90 deg for 20 min (Munich malt rest)
122 deg for 20 min
154 deg for 80 min
170 mashout for 20 min
Boil: 90 minutes SG 1.052 7 gallons
Hops: 1. oz. Styrian Goldings (5.5% AA, 90 min.)
.5 oz. Tettnanger (4.5% AA, 25 min.)
.5 oz. Tettnanger (aroma)
Yeast: white labs abbey ale, stepped up in a one quart starter

Carbonation: 8/10 cup carbonation for medium-high carbonation
