Biere de Garde

I tried to copy the french beer 3 Monts with this batch.
Super Alpha is a New Zealand hop that is a blend of noble german
and english hops.

Type: Partial mash Size: 12 liters
Color:
10 HCU (~7 SRM)
Bitterness: 28 IBU
OG: 1.055 FG: 1.012
Alcohol: 5.6% v/v (4.4% w/w)
Water: very soft clean tap water
Grain: 175g Organic Pilsner
150g Organic Raw wheat
Mash: 85% efficiency
I sour mashed the pilsner malt after a short steeping (45mins)
and left if dor 3 days in a closed pot. Them I added the wheat and mashed as usual.
1hr at 65°
Boil: 60 minutes SG 1.055 12 liters
1.5kg Light malt extract
300g Home-made Rock candy (Amber)
Hops: 10g NZ Super Alpha (12% AA, 60 min.)
14g NZ Super Alpha (12% AA, 5 min.)
Yeast: Safale dried yeast
Log: 1 week primary
1 week secondary
Carbonation: 1tsp of cane sugar per 745ml bottle
Tasting: This beer turned out well, the tartness of the sourmash and hops blended well. A great refresher on a hot day. Next time I think ill make it stronger and increase the sourness accordingly.
