This is straight out of a back issue of Zymurgy. Very high mash temp!

41 HCU (~19 SRM)
Bitterness: 31 IBU
OG: 1.081 FG: 1.030
Alcohol: 6.5% v/v (5.1% w/w)
Water: Tap water
Grain: 8 lb. Belgian pale
6 lb. American Vienna
.75 lb. Belgian Special B
Mash: 80% efficiency
Mash at 165-167 degrees F for 90 minutes.
Boil: 120 minutes SG 1.053 8 gallons
1/2 tsp Irish moss during last 20 minutes
Hops: 2.25 oz. Hallertauer Mittelfruh (4.7% AA, 45 min.)
Yeast: White Labs "Belgian Ale"
Log: Primary ferment at 60-74 degrees F for one week (temp climbed during vigorous fermentation), then to secondary.
Tasting: To secondary 12/2/01
