Bitterness: 20 IBU
OG: 1.044 FG: 1.010
Alcohol: 4.4% v/v (3.5% w/w)
Grain: 8 oz. Belgian aromatic
4 oz. Flaked oats
8 oz. Flaked wheat
Steep: Crush and steep grains in 1 gallon water 150°F water for 30 minutes; sparge with 1/2 gallon 170°F water.
Boil: 60 minutes SG 1.088 2.5 gallons
5.5 lb. Wheat extract
Add water to make 2.5 gallons and bring to boil. Add 0.25 oz bitter orange peel, 0.75 tsp crushed coriander seeds, and 1/8 tsp crushed cumin seeds all at 45 minutes. Then at 13 minutes add 0.5 oz bitter orange peel, 0.5 tsp crushed coriander seeds, and 1/8 tsp crushed cumin seeds.
Hops: 1 oz. Kent Goldings (4.1% AA, 60 min.)
0.5 oz. Kent Goldings (6.3% AA, 45 min.)
0.5 oz. Saaz (5.0% AA, 13 min.)
Yeast: Wyeast 3944 Belgian Witbier yeast
Log: Ferment at 60-75°F for 5-7 days or until fermentation slows and then rack to secondary. Bottle after around 2 weeks in secondary; bottle condition for 2-3 weeks.
Carbonation: Prime with 3/4 cup corn sugar.
