White Christmas

Brew made for distribution at our annual Christmas party.

Beer: White Christmas Style: Belgian White (Wit)
Type: Extract w/grain Size: 18.9 liters
Color:
2 HCU (~2 SRM)
Bitterness: 17 IBU
OG: 1.047 FG: 1.010
Alcohol: 4.8% v/v (3.7% w/w)
Grain: 57g Flaked wheat
Steep: Steep @ 155 degrees for 15 minutes. Remove and sparge.
Boil: 60 minutes SG 1.047 18.9 liters
1.81kg Wheat extract
0.91kg Honey
Use orange blossom honey. Add 7g of corriander and 15g of orange peel at last 15 minutes of boil. Add another 7g of corriander during cooling for aroma. Add one tablespoon of Irish Moss at last 15 minutes of boil.
Hops: 28.4g Hallertauer (4.25% AA, 60 min.)
14.2g Hallertauer (4.25% AA, 5 min.)
Yeast: Wyeast Belgian Wit (# 3944)
Log: Ferment at room temp. Rack after bubbling slows past 30 seconds. Bottle once bubbling reaches 1.5 minute intervals.
Carbonation: Added 3/4 cup corn sugar for priming.
Tasting: Used plastic buckets that had been damaged with bleach. Should have been good. Would have used more corriander. Consider adding to secondary.
B-brite and Idophor are your friend.
