Bitterness: 18 IBU
OG: 1.046 FG: 1.008
Alcohol: 4.9% v/v (3.8% w/w)
Water: Add lactic acid to hot liquer tank before dough-in to adjust Ph to 4.1
Grain: 10 lb. German Pilsner
4 lb. Wheat malt
8 oz. Rolled oats
4 lb. Flaked wheat
Mash: 80% efficiency
Dough in acid rest at 97 deg. till Ph is less than 4.0
Slowly raise temp for
Sach Rest at 148 till conversion complete.
Sparge out at 170
Boil: 90 minutes SG 1.039 14 gallons
Add hops as specified.
Add 1 oz. fresh ground corriander 30 minutes before end of boil
Add 2 oz Orange Peel just before end of boil.
Hops: 1 oz. Saaz (3.5% AA, 60 min.)
1 oz. Saaz (3.5% AA, 45 min.)
1 oz. Saaz (3.5% AA, 30 min.)
1 oz. Saaz (3.5% AA, 15 min.)
Yeast: Hefeweizen
Log: Ferment at 68-72 deg.
Sample from secondary if additional tartness is needed add lactic acid to tea below and add to secondary.
Make 1 qt. tea from 1/2 Oz. orange peel, 1/2 tsp black pepper, 1/2 tsp cumin, 1/2 oz corriander and add to secondary.
Carbonation: 2.4 volumes Keg: 9.7 psi @ 37°F
