Kiljohan

This is a modification to VF red ale
Johan is a friend of mine who has put his name to this beer

Beer: Kiljohan Style: Red ale
Type: All grain Size: 25 liters
Color:
24 HCU (~13 SRM)
Bitterness: 26 IBU
OG: 1.044 FG: 1.011
Alcohol: 4.3% v/v (3.4% w/w)
Water: 1 tsp gypsum in the mash water
Grain: 4000g British pale
250g Dextrine malt (Cara-Pils)
125g Roasted barley
200g Flaked corn
125g Flaked wheat
Mash: 75% efficiency
Mash-in with 7 liters 65°C water as to get 50-53°C (I landed at 53°C)
Add 5 liters of boiling water, little by little, and raise to 66-67°C
Hold this temperature for 90 minutes.

Waterratio: 2,6 liters / kg malt
Lauter with 75°C water to 25 liters.
Boil: 90 minutes SG 1.044 25 liters
1 tsp Irish moss the last 20 minutes of boil

I added 5 liters of ice, made of preboiled water to the wort after boil, just to lower temperature.

Hops: 7g Northern Brewer (10% AA, 60 min.)
7g Target (12.6% AA, 60 min.)
7g Kent Goldings (5.9% AA, 30 min.)
7g Target (12.6% AA, 30 min.)
7g Fuggles (3.8% AA, 5 min.)
7g Kent Goldings (5.9% AA, 5 min.)
Yeast: 1liter liquid British ale yeast from starter bottle.
Log: 980824 Brewed the lot
980830 Prim. fermentation completed
980907 Primed and kegged in ale keg (plastic)
Carbonation: 160g Dextrose preboiled in 200 ml of water.
Tasting: This one is great, not enough though.
It's worth making again, and again, and again, and again.
