Water: 1 tsp gypsum in mash water
Grain: 22 lb. American 2-row
1 lb. Wheat malt
1 lb. American Munich
1 lb. American crystal 20L
.5 lb. American crystal 40L
.5 lb. American crystal 60L
1 lb. Dextrine malt (Cara-Pils)
1 lb. American victory
Mash: 62% efficiency
Add 9 gallons of water @ 167°F to grain. Hold for 90 minutes. Sparge with 6 gallons of water @ 165°F.
Boil: 90 minutes SG 1.055 11.5 gallons
1 tsp irish Moss last 15 min
Hops: 2 oz. Perle (8.4% AA, 90 min.)
2 oz. Cascade (6.9% AA, 45 min.)
Yeast: 2- American Ale 1056 quart starter
Log: Primary 1 week
Secondary 2 weeks (2 oz cascade in each (5 gal)fermenter)
Chill after secondary for 2 weeks @ 32F.

Carbonation: 2.5 volumes Keg: 8.2 psi @ 32°F
