Rainy Monday Belgian Tripel

It poured all day the day I brewed this, hence the name!

11 HCU (~8 SRM)
Bitterness: 35 IBU
OG: 1.080 FG: 1.018
Alcohol: 8.0% v/v (6.2% w/w)
Water: 5 gallons distilled & 5 gallons filtered for mash.
5 gallons distilled & 3 gallons filtered for sparge.
Grain: 1 lb. Dextrine malt (Cara-Pils)
25 lb. German Pilsner
6 oz. Wheat malt
2 lb. Flaked barley
2 lb. Belgian aromatic
8 oz. Belgian CaraVienne
Mash: 51% efficiency
126° for 10 min.
140° for 30 min.
150° for 90 min.
Boil: 105 minutes SG 1.066 12 gallons
5 lb. Honey
2tsp. Yeast nuitrient.
Add honey for last 15 minutes of boil.
Hops: 2 oz. Kent Goldings (5% AA, 75 min.)
1 oz. Tettnanger (4.2% AA, 75 min.)
1 oz. Saaz (3.9% AA, 45 min.)
1 oz. Saaz (3.9% AA, 15 min.)
1 oz. Tettnanger (4.2% AA, 15 min.)
1 oz. Saaz (3.9% AA, 5 min.)
1 oz. Saaz (aroma)
Yeast: 1388 Belgian Strong ale in 1 qt. starter
Log: Brewed 5-21-01. Fermemtation started within 6 hours.
Carbonation: Keg 5 gallons, Bottle 5 gallons with 1-1/4 cup DME batch prime.
