Boil: 90 minutes SG 1.057 7 gallons
12 oz. Brown Belgian candi sugar
Irish moss at 20 min
Hops: .5 oz. Willamette (4.7% AA, 60 min.)
.5 oz. Tettnager (4.6% AA, 60 min.)
.5 oz. Willamette (4.7% AA, 30 min.)
.5 oz. Tettnager (4.6% AA, 30 min.)
.5 oz. Saaz (3.9% AA, 10 min.)
Yeast: Hennepin Dregs starter stepped up to 2 qts
Log: Ferment primary at 72F, 1 week. (pitch at 65F and let rise to ~72F)
Secondary at 75F, 2 weeks to ensure completion
Carbonation: 4/5 cup of corn sugar per five gallons.
