Alcohol: 6.5% v/v (5.1% w/w)
Grain: .5 lb. Belgian CaraMunich
.5 lb. Belgian CaraVienne
.5 lb. Belgian Special B
Steep: Steep grains for 30 minutes at 155° Sparge slowly with 1 gallon of water at 170°

Boil: 60 minutes SG 1.208 1.5 gallons
5 lb. Light malt extract
1 lb. Light dry malt extract
1 lb. Belgian candi sugar
Add extract malt and dry malt at time of boil. After transfer to carboy add additional water to make 5 gallons.
Hops: 2 oz. Styrian Goldings (5.5% AA, 60 min.)
.5 oz. Styrian Goldings (5.5% AA, 45 min.)
.5 oz. Styrian Goldings (5.5% AA, 30 min.)
.5 oz. Styrian Goldings (5.5% AA, 15 min.)
.5 oz. Styrian Goldings (aroma)
Yeast: WLP500 Trappist Ale Yeast
Log: Ensure you start ferment at 70-75°, then low temperature between 62 - 67° for one week and transfer to secondary and let set for two-three weeks, then bottle with 5 oz. of corn sugar.
