Alcohol: 7.4% v/v (5.8% w/w)
Grain: 12 lb. 4 oz. Belgian pale
4 oz. Belgian aromatic
6 oz. Belgian biscuit
10 oz. Belgian CaraMunich
4 oz. Belgian Special B
0 oz. Belgian chocolate
Mash: 60% efficiency
90 minute mash.
Boil: 60 minutes SG 1.046 7.5 gallons
1 lb. Belgian candi sugar
1 tsp. Irish moss.
1 oz. Bitter Orange peels.
Hops: .5 oz. Styrian Goldings (6.8% AA, 55 min.)
.25 oz. Styrian Goldings (6.8% AA, 45 min.)
.25 oz. Styrian Goldings (6.8% AA, 30 min.)
.25 oz. Styrian Goldings (6.8% AA, 15 min.)
Yeast: WLP 530 Abbey Ale.
Log: 7 days primary.
2-3 weeks secondary.
Minimum 2 weeks in the bottle. 4 weeks preferred.
Carbonation: 1 cup - Corn Sugar
Tasting: If you don't quite like the bite... remove the Special B and add those
4 ounces back to the Pale Ale and then add 1-2 oz. of Belgium chocolate for color... or not.
