Dubbel Dose

This is one of my favorite styles of beer. I am trying to make something similar to the dubbel made by the T'ij brewery in Amsterdam, but will probably fall short since it's one of the best I've ever had.

Type: All grain Size: 5.5 gallons
Color:
118 HCU (~39 SRM)
Bitterness: 27 IBU
OG: 1.075 FG: 1.016
Alcohol: 7.6% v/v (6.0% w/w)
Water: My water source is extremely soft so I added some gypsum.
Used some irish moss in the boil.
Grain: 8 lb. Belgian Pilsner
0.5 lb. Wheat malt
2.5 lb. Belgian CaraMunich
2 lb. Belgian Special B
Mash: 70% efficiency
122° for 30
140° for 10
150° for 15
158° for 15
*158° for 20
*not much conversion for the first 158 so I left it another 20
Boil: 90 minutes SG 1.059 7 gallons
1 lb. Light dry malt extract
1 lb. Belgian candi sugar
Irish moss
Hops: 1.5 oz. Tettnanger (4.2% AA, 90 min.)
0.5 oz. Tettnanger (4.2% AA, 30 min.)
0.5 oz. Saaz (3.4% AA, 15 min.)
0.5 oz. Saaz (aroma)
Yeast: Used a 1/2 liter starter.
Used a belgian ale yeast.
Log: 1° Fermentation for 1 week and 1 day (12/19/1-12/27/1)
2° Fermentation for 1 week and 4 day's (12/27-1/7/2)
Bottle on 1/7/2 and rack for at least 3 weeks
Carbonation: 3/4 c. corn sugar and bottle condition
