Lenten Dubbel

Brew on Winter Solstice; Bottle first week of January.

Beer: Lenten Dubbel Style: Belgian Dubbel
Type: Extract w/grain Size: 5 gallons
Color:
28 HCU (~15 SRM)
Bitterness: 22 IBU
OG: 1.070 FG: 1.014
Alcohol: 7.2% v/v (5.6% w/w)
Grain: 1 lb. Belgian CaraMunich
1 lb. Belgian CaraVienne
Steep: Steep crushed grains in nine quarts of 150°-155° F water for 30 minutes.
Use tap water here if it is any good.
Boil: 60 minutes SG 1.155 2.25 gallons
7 lb. Light malt extract syrup
1.5 lb. Light Honey
Add 0.25 tsp. powdered Irish moss with 15 minutes remaining in boil.
Hops: 2 oz. Northern Brewer (8% AA, 60 min.)
0.5 oz. Mt. Hood (aroma)
Yeast: WLP500 Trappist Ale Yeast;
Pitch at mid-70s degrees.
Log: Brew and condition (nine weeks in bottle) at low- to mid-60s degrees.
Carbonation: Batch prime with 0.75 cup corn sugar.
