First attempt at a Belgian Dubbel.

57 HCU (~24 SRM)
Bitterness: 23 IBU
OG: 1.071 FG: 1.014
Alcohol: 7.4% v/v (5.8% w/w)
Water: Well water, Rutland Township, IL. High in carbonates. No analysis so far. Added 1/4 cup phosporic acid 10% to 8 gallons mash/sparge water
Grain: 2 lb. American 2-row
7 lb. British Pilsner
2 lb. Belgian biscuit
1 lb. Belgian Special B
Mash: 73% efficiency
Straight infusion 156 for 60 minutes. Decoction - 1.5 gallons at end of mash. No mash-out - not enough room in Gott. Sparged for 60 minutes using Phils Sparger - cool toy! Collected 6 gallons on the nose. Made #'s as expected.
Boil: 60 minutes SG 1.059 6 gallons
1 lb. Belgian candi sugar
Belgian Candi sugar added at beginning of boil.
Hops: 1 oz. Styrian Goldings (5.2% AA, 60 min.)
1 oz. Saaz (3.6% AA, 15 min.)
Yeast: Belgian Ardennes WYeast 3522 XL. One half gallon of 1.020 starter.
Log: 2/7/01 - mash / sparge / boil / chill
Tasting: mash runnings had quite a nice malty flavor. no tannins detected.
