Chimay Blue Clone

This was inspired by Chimay Blue, but was tweaked to have more chocolate flavor in this Belgian Strong Ale.

Beer: Chimay Blue Clone Style: Belgian Strong Ale
Type: Partial mash Size: 5 gallons
Color:
79 HCU (~30 SRM)
Bitterness: 25 IBU
OG: 1.093 FG: 1.020
Alcohol: 9.4% v/v (7.4% w/w)
Grain: 8 oz. Belgian aromatic
8 oz. Belgian CaraMunich
8 oz. American chocolate
Mash: 80% efficiency
Mashed grains with 1 1/2 quarts water at 168°
for 30 minutes, then rinsed with 3 quarts of water at 170°
Boil: 60 minutes SG 1.116 4 gallons
6.6 lb. Amber malt extract
2 lb. Amber dry malt extract
2 lb. Brown sugar
Added all DME and LME at end of boil, then let steep for 15 minutes. Next time I may try adding the DME for the last 10-15 minutes of the boil to have it "melt" in quicker.
Hops: 2 oz. Tettnanger (4.7% AA, 60 min.)
1 oz. Willamette (4.9% AA, 15 min.)
Yeast: White Labs Trappist Style Ale WLB 500

09/28/10 Second Fermentation
10/09/10 Bottled 48 12 oz and one 32 oz bottles, totaling 608 ounces
Actual gravities were 1090 and 1020 for a 9.0% ABV
Carbonation: 5 oz priming sugar
Tasting: This is a very smooth chocolatey strong ale that goes down easy. Beware as it is 9.0% ABV, and should be sipped and enjoyed slowly.
