Bitterness: 35 IBU
OG: 1.088 FG: 1.013
Alcohol: 9.7% v/v (7.6% w/w)
Water: Filtered tap water
Grain: 12 lb. Belgian Pilsner (Dewolf - Cosyns)
1 lb. Wheat malt (Dewolf - Cosyns)
3 lb. German Munich (Weissheimer)
1 oz. Belgian Special B (Dewolf - Cosyns)
Mash: 75% efficiency
Start mash with 4.5 gallons water add grain at strike temp.of 165° and hold for 75 min.@152°, raise to 170° and mash out for 10 min.
Boil: 75 minutes SG 1.069 8.0 gallons
1 lb. Belgian candi sugar ( Light )
1.5 lb. Corn sugar
Add candy/sugar after boil starts,add hops as directed. Irish moss and wort chiller last 15 min. of boil.
Hops: 2 oz. Styrian Goldings (4% AA, 60 min.)
1.25 oz. Hallertau Hersbrucker (3.8% AA, 30 min.)
1 oz. Saaz (3.70% AA, 15 min.)
.5 oz. Saaz (aroma)
Yeast: Wyeast # 1388 Belgian strong ale (make 16 oz. starter in advance)
Log: Ferment @ 68 degrees for 17 days rack to secondary lower to 64-66 degrees for 36 days. bottle or keg and age for 12-14 weeks.
Carbonation: 2.2 volumes Corn Sugar: 2.31 oz. for 3.25 gallons @ 67°F
Keg 3 gallons ( forced carb.2 weeks after in keg ) bottled 3.25 gallons.
