Bitterness: 23 IBU
OG: 1.061 FG: 1.012
Alcohol: 6.3% v/v (5.0% w/w)
Water: Decanted Bartlett,IL tap water
Grain: 8 oz. Belgian biscuit
Steep: biscuit malt is steeped in a grain bag approx 45 min. to 160 degrees then remove
Boil: minutes SG 1.152 2 gallons
3 lb. Light dry malt extract
3 lb. Amber dry malt extract
12 oz. Corn sugar
1 tsp irish moss last 15 min of boil
1 tsp star anise 20 min into boil
1/2 oz. bitter orange peel 20 min into boil
Hops: 1 oz. Centennial (10.5% AA, 60 min.)
1 oz. Mt. Hood (4.5% AA, 45 min.)
1 oz. Saaz (3.75% AA, 15 min.)
Yeast: wyeast 1388 Belgian Strong Ale
Log: Very active primary for 1 week, transfered to secondary for another 2 weeks then to bottle
