Steep: (1) 60°C for 20 min.
(2) 70°C for 30 min.
Boil: 60 minutes SG 1.067 24 liters
3.80kg Light malt extract
300g Belgian candi sugar
500g Honey
10 whole nails of clove
1 gr crashed black pepper
Hops: 30g Willamette (5% AA, 60 min.)
20g Willamette (5% AA, 15 min.)
10g Willamette (aroma)
Yeast: dry yeast: T-58
Carbonation: 2.2 volumes Corn Sugar: 118g for 20 liters @ 27°C
