Spring Saisson

Hoping to repro the great flavor of the autumn 2006 New Belgium Saison.

Beer: Spring Saisson Style: Bière de Garde
Type: Extract w/grain Size: 5.5 gallons
Color:
16 HCU (~10 SRM)
Bitterness: 20 IBU
OG: 1.080 FG: 1.018
Alcohol: 8.0% v/v (6.3% w/w)
Water: Filtered water from local KMart's dispenser (makes very nice lagers and Belgians)
Grain: 2 lb. Belgian Pilsner
1 lb. American crystal 60L
Boil: 70 minutes SG 1.126 3.5 gallons
7 lb. German Pils malt extract
2 lb. Wheat dry extract
1.5 lb. Honey
Using German Pils LME, which makes a lighter color.
Add 3/4 oz. bitter orange, 1/2 oz. crushed coriander seed during last 15 minutes, and 1/2 oz coriander at last 2 minutes. Short boil (30 mins) for the LME. Honey added after 1st week of fermentation.
Hops: 2 oz. Hallertauer (4.25% AA, 60 min.)
1 oz. Saaz (3.75% AA, 30 min.)
1 oz. Saaz (aroma)
Yeast: WLP565 Belgian Saisson. Needs warm(>70°F), long(>3 weeks) ferment.
