This was my second batch of a spiced Belgian Christmas ale. It is a beautiful red, fairly strong beer with a nice Belgian yeast flavor. It is a very interesting beer, which is best appreciated in a brandy glass, and enjoyed slowly, sip by sip.

Color:
11 HCU (~8 SRM)
Bitterness: 10 IBU
OG: 1.092 FG: 1.024
Alcohol: 8.8% v/v (6.9% w/w)
Water: None
Grain: 1 lb. Belgian Pilsner
1 lb. Dextrine malt (Cara-Pils)
Steep: Grains steeped until boil.
Boil: 60 minutes SG 1.141 3.25 gallons
7 lb. Light malt extract
1 lb. 8 oz. Light dry malt extract
2 lb. 8 oz. Honey
12 oz fresh cranberries added at end of boil (blended in blender)
1 whole cinnamon stick (15 mins)
2 oz dried orange peel, 1 oz 30 min, 1 oz 15 min
1 oz coriander 10 min
Hops: 1 oz. Hallertauer (4.2% AA, 60 min.)
1 oz. Saaz (3.0% AA, 15 min.)
Yeast: White Labs Abbey Ale

ABV was 7.7%
Carbonation: 5 oz priming sugar
Tasting: With gravities this high you have to use a blow off tube, as the initial fermentation is best describe as violent!
