Femme Fatale

The intent is to make a light bodied, slightly fruity beer with high alcohol content.

7 HCU (~6 SRM)
Bitterness: 25 IBU
OG: 1.083 FG: 1.008
Alcohol: 9.7% v/v (7.6% w/w)
Grain: 12 lb. Belgian Pilsner
2 oz. Honey malt
3 oz. Belgian aromatic
3 oz. Belgian biscuit
Mash: 70% efficiency
Mash at 148°F for 120 minutes
mash out at 170°F
sparge with 170° water up to 6 gallons
Boil: 60 minutes SG 1.069 6 gallons
2 lb. Belgian clear candi sugar
irish moss with 15 minutes left in the boil
Hops: .75 oz. Challenger (9% AA, 60 min.)
.25 oz. Hallertauer (4.25% AA, 15 min.)
.25 oz. Styrian Goldings (5.5% AA, 15 min.)
.25 oz. Saaz (aroma)
Yeast: White labs 570 Belgian golden ale in a 1/2 gallon starter
Tasting: tasted when I transferred to the secondary. Very light, mildly fruity, and refreshing. You'd never guess that it's over 9% alcohol. Dangerous. Exactly what I intended, but I didn't expect it to be so successful. I think that maybe this beer need to have a warning label or something.
