Winter's Grand Cru

Nice Belgian Strong Ale for the winter months and into spring.

OG: 1.083 FG: 1.014
Alcohol: 8.9% v/v (6.9% w/w)
Water: Charcoal Filtered
Grain: 10 lb. Belgian pale
2 lb. Wheat malt
8 oz. Belgian CaraVienne
3 oz. Belgian chocolate
8 oz. Belgian CaraMunich
Mash: 67% efficiency
Mash at 155° for 90 minutes. Sparge with enough water at 167° to make up 6.5 gallons for the boil.
Boil: 60 minutes SG 1.069 6 gallons
1 lb. Belgian candi sugar
1 lb. Honey
Honey and candi sugar 20 minutes from end, Irish Moss 15 minutes from end.
Hops: .5 oz. Fuggles (4.5% AA, 60 min.)
1 oz. Saaz (3.5% AA, 60 min.)
.5 oz. Fuggles (4.5% AA, 30 min.)
Yeast: White Labs WLP530 Abbey Ale Yeast.
Carbonation: 2.0 volumes Corn Sugar: 3.19 oz. for 5 gallons @ 68°F
