Alcohol: 7.7% v/v (6.1% w/w)
Grain: 7 lb. German Pilsner
7 lb. American Vienna
.5 lb. Belgian Special B
.5 lb. Belgian aromatic
Mash: 71% efficiency
Mash at 156°F for 90 minutes, then mash-out and sparge with 167°F
water.
Boil: 2 hours minutes SG 1.061 7.5 gallons
1.5 lb. Belgian candi sugar
1 hour of boil before first hops addition to carmelize wort a bit
Hops: .5 oz. Hallertauer (5.8% AA, 60 min.)
.5 oz. Hallertauer (4.7% AA, 60 min.)
1 oz. Hallertauer (5.8% AA, 30 min.)
.5 oz. Hallertauer (5.8% AA, 15 min.)
Yeast: White Labs WLP-500 Trappist.
Sure have come a long way since having to culture a Chimay bottle
to get authentic Belgian yeast!
