Let's Get Mikey

Let's Get Mikey is a product of not enough sleep,& wanting to throw
together a batch to brew without a lot of crap.

Brewer: King Cobra Email: -
Beer: Let's Get Mikey Style: Belgian Pale Ale
Type: Extract w/grain Size: 6.0 gallons
Color:
22 HCU (~12 SRM)
Bitterness: 20 IBU
OG: 1.063 FG: 1.010
Alcohol: 6.8% v/v (5.4% w/w)
Water: Use bottled spring water.
Add 1 Teaspoon Amylase Enzyme with grains in cold water.
Grain: 2 lb. American crystal 40L
Steep: Place grains & Amylase Enzyme in cold water. Bring to boil.
Turn off heat, let sit for 30 minutes. Remove spent grains & continue
with boil.
Boil: 60 minutes SG 1.076 5.0 gallons
6 lb. Light malt extract
1 lb. Brown sugar
2 lb. Honey
Add 1/2 lb. Malto-Dextrine at beginning of boil.
Add 1/2 Teaspoon Irish Moss at 30 minutes left in the boil.
Hops: 0.66 oz. Northern Brewer (8.5% AA, 60 min.)
0.66 oz. Tettnanger (4.5% AA, 30 min.)
1.0 oz. Saaz (aroma)
Yeast: White Labs Belgian Golden Ale Yeast in 1L starter.
Make starter at least 3 days in advance of brewing date.
Log: Pitch yeast when cooled to ~70*F. Primary ferment for 1 week.
Rack to secondary & let it sit for 2 weeks.
Bottle after 2 weeks. Let sit 2 to 3 weeks to age.
Carbonation: 2.6 volumes Corn Sugar: 5.21 oz. for 5.5 gallons @ 70°F
Mix corn sugar in tepid water, heat on stove until dissolved
completely. Add to bottling bucket & let beer splash over it
to mix thoroughly.
Tasting: Might be a decent beer to try. Let's get Mikey, yeah, he'll
drink anything !!!
