IPA #5

It took several batches and variations to come up
with this final recipe. It is my 'house brew', and I brew
it at least every other session.

Beer: IPA #5 Style: India Pale Ale
Type: All grain Size: 10.8 gallons
Color:
15 HCU (~9 SRM)
Bitterness: 66 IBU
OG: 1.062 FG: 1.012
Alcohol: 6.5% v/v (5.1% w/w)
Water: Three (3) tsp gypsum, 1 in mash, 1 in sparge water
and 1 in boil.
Grain: 18 lb. British pale
1 lb. Belgian aromatic
3 lb. Belgian biscuit
1 lb. Dextrine malt (Cara-Pils)
1 lb. British Carastan light
Mash: 75% efficiency
Single infusion, 151-149, 90 minutes
Boil: 90 minutes SG 1.048 14 gallons
Irish moss, 2 tsp last 15 min of boil
Hops: 2 oz. UK Challenger (7% AA, 90 min.)
1 oz. Nugget (13% AA, 90 min.)
1 oz. Fuggles (4.75% AA, 30 min.)
2 oz. Kent Goldings (5% AA, 30 min.)
1 oz. Fuggles (aroma)
1 oz. Kent Goldings (aroma)
Yeast: White Labs Burton Ale, 1.5 quart starter
Log: Ferment at 65-68; Dryhop with 1 oz Fugggles for 2 weeks in secondary.
Carbonation: Dextrose, 9 oz for 10 G.
Tasting: Compared it the other night directly with Fuller's IPA (one of my favorites): IPA #5 is slightly less sharp in its bitterness, yet assertive enough and the malt comes through a bit more. Body, mouthfeel, color, head retention pretty much the same. My wife preferred IPA#5......
