Bitterness: 125 IBU
OG: 1.066 FG: 1.013
Alcohol: 6.8% v/v (5.4% w/w)
Water: Ralph's purified water
Grain: 1 lb. Carafa I
.25 lb. Chocolate Wheat
.75 lb. Raw wheat
.5 lb. American crystal 90L (Dark Crystal)
Steep: Steep dark crystal and wheat (grain bag) in 155° water for 15 min. Add Carafa and chocolate wheat to grain bag and continue to steep for 15 more min. Rinse with 2 quarts of 170° water.
Boil: 60 minutes SG 1.119 2.5 gallons
6 lb. Light liquid malt extract
1 lb. Light dry malt extract
60 min - Add all LME/DME and 1.5 oz Millenium
30 min - Add .5 oz Simcoe
15 min - Add .5 oz Simcoe and 1 Whirlfloc tab
2 min - Add .75 oz Amarillo, .5 oz Simcoe
Hops: 1.5 oz. Millenium (15% AA, 60 min.)
.5 oz. Simcoe (12.7% AA, 30 min.)
.5 oz. Simcoe (12.7% AA, 15 min.)
.75 oz. Amarillo (8.2% AA, 2 min.)
.5 oz. Simcoe (12.7% AA, 2 min.)
1.25 oz. Amarillo (aroma)
.5 oz. Simcoe (aroma)
Yeast: WLP-001
Log: Removed wort from burner, added 2 gallons cold water. Used wort chiller for 2 hrs, brought temp. to 86°. Poured wort into fermenter, added 1 gallon cold water, brought temp. to 74°. Pitched room temp liquid yeast directly into wort, no starter.
Fermentation started within 24 hrs. Temp to 76°

Ferment in primary for 7 days. Rack to secondary and dry-hop with 1.25 oz. Amarillo and .5 oz. Simcoe. Let sit in secondary 14 days then bottle. Carbonation perfect after 14 days.
Carbonation: Bottle with 3/4 cup priming sugar.
Tasting: Clear, very dark, and hoppy. Citrus & hoppy at first, crisp, and finishes with a slight note of roastiness. Black goodness.
