Water: 8 grams Gypsum; 1/2 in mash, 1/2 in sparge water.

6.84 lb. British pale
0.91 lb. American crystal 60L
Mash: 78% efficiency
toast 0.5 lb. 2-row for 10 mins/350F. add 4gm gypsum to 10-12 quarts water and heat to 145F. add crushed grains. mash will stabilize at 133F. hold for 30 mins. add 5 quarts boiling water to mash and hold for 45 mins. raise to 158F and hold for 20 mins. once conversion is complete, heat mash to 167F and sparge with 3 gallons (add other half of gypsum) preboiled water at 170F.
Boil: 60 minutes SG 1.037 6.5 gallons
add irish moss in last 15 minutes of boil.
Hops: 2.18 oz. Northern Brewer (7.0% AA, 60 min.)
1 oz. Amarillo (aroma)
Yeast: White Labs #WLP023 Burtons Ale Yeast
