Irish Phil Ale

Named after the cheapest bastard on the planet.
Not enough volume collected after sparge hence the higher
than expected OG.

13 HCU (~9 SRM)
Bitterness: 52 IBU
OG: 1.066 FG: 1.014
Alcohol: 6.7% v/v (5.2% w/w)
Water: 1 tsp gypsum in mash water (15 gal)
1.5 TB lactic acid in sparge (15 gal)
Grain: 22 lb. American 2-row
1 lb. American Munich
2 lb. American crystal 40L
Mash: 70% efficiency
Mashed in too high at 158°. Starched converted, checked at 60 min.
Sparge water at 172° for a 60 min sparge. Collected 12 gallons.
Boil: 90 minutes SG 1.049 13.0 gallons
1 tsp Irish moss at 15 minutes
2 tsp yeast nutrient (diammonia phosphate)
Hops: 2 oz. Northern Brewer (6.5% AA, 60 min.)
2 oz. Northern Brewer (6.5% AA, 30 min.)
2 oz. Cascade (7% AA, 15 min.)
Yeast: White labs California Ale yeast
2 pint starter with DME. Very little lag time.
Log: Dry hopped 2oz Cascade flowers.
Brewed 8/8/99 for the Hub Labor Day Party!!
Carbonation: force carbonated in 2 Corny kegs. ~1.6ppv
Tasting: Initial tasting from hydrometer flask good!! Noted lots of floaters in sample. Hopefully they will settle out.
