Cascade Harvest IPA

Brewed this batch with freshly picked Cascades. Used 60 g wet Cascades for First Wort Hopping, and the other cascade additions (used 15g in the spreadsheet to account for drying).

Bitterness: 64 IBU
OG: 1.072 FG: 1.014
Alcohol: 7.4% v/v (5.8% w/w)
Water: Add the following to 6 gallons of mash water
1.8 g Gypsum
1.2 g Epsom Salt
0.6 g NaCl (non iodized)
3.6 g CaCO3
Grain: 5 lb. American 2-row
4 lb. British pale
2.5 lb. American Munich
1 lb. American victory
1 lb. American crystal 40L
.5 lb. Raw wheat
Mash: 78% efficiency
add 3.5 gal mash water at 166°F for 152°F Saccharification rest
Add 2.5 gal mash water at 200°F for 170°F mash out
Boil: 60 minutes SG 1.061 6.5 gallons
1 tsp Irish Moss @ 15 min
Hops: 30g Galena (13.8% AA, 60 min.)
15g Cascade (6% AA, 15 min.)
15g Cascade (6% AA, 5 min.)
15g Cascade (aroma)
Yeast: White Labs WLP 001, dregs from previous batch put into a 500 ml starter
Log: Primary ferment for 2 weeks, rack to keg and Dry hop for 2 weeks with 30g Dried Cascades
