Honeycomb IPA

Type: Extract w/grain Size: 5.5 gallons
Color:
11 HCU (~8 SRM)
Bitterness: 15 IBU
OG: 1.075 FG: 1.012
Alcohol: 8.1% v/v (6.3% w/w)
Grain: 4 oz. American crystal 60L
Steep: 60L malt steeped at 150 degrees for 20 minutes (in a muslin bag) in a gallon of water.
Boil: 60 minutes SG 1.205 2 gallons
6 lb. 10 oz. Light malt extract
0 lb. 8 oz. Light dry malt extract
6 oz. Corn sugar
3 lb. Honey
Add a gallon of water to the mash; Irish moss added at 45 minutes.
Hops: 1 oz. Nugget (12% AA, 60 min.)
.5 oz. Perle (8% AA, 30 min.)
1 oz. Cascade (6% AA, 15 min.)
1 oz. Cascade (aroma)
Yeast: Wyeast American Ale 1056 Activator, pitched when wort reaches 70 degrees. Pouch started 48 hours in advance.
Log: Fermentation temperatures range from 63-68 degrees. Primary fermentation from 7-12 days. Dry hopped with 1 ounce of Cascade leaf hops in secondary fermentation. Secondary until FG reaches 1.015 or lower.
Carbonation: Bottled with 1 cup of light malt boiled in 16 ounces of water. Added directly to bottling bucket.
Tasting: Smooth and hoppy. Clean finish. Moderate carbonation. Similar in color to a Sierra Nevada, with a higher alcohol content. Not as bitter as some commercial Imperial IPAs, and not a total hop monster.
