Type: Extract w/grain Size: 5 gallons
Color:
21 HCU (~12 SRM)
Bitterness: 42 IBU
OG: 1.088 FG: 1.012
Alcohol: 9.8% v/v (7.7% w/w)
Grain: 1 lb. American crystal 40L
Boil: 60 minutes SG 1.176 2.5 gallons
11 lb. Light malt extract
Hops: 1 oz. Centennial (10.5% AA, 60 min.)
.5 oz. Nugget (12% AA, 60 min.)
2 oz. Amarillo (11% AA, 60 min.)
1 oz. Centennial (aroma)
.75 oz. Willamette (aroma)
Yeast: Saison Style Yeast Blend, starter 1 day before pitching.
Log: Dry hopped with 1 oz Cascade.
Had a very high OG (1.090) and just kept fermenting. Sat in carboys for 41 days and was still fermenting (we couldn't wait any longer).
Tasting: The beer is 10.2% and you can hardly taste it. The strong malty flavor hides the alcohol. Would add more hops next time!!
