Mad Hops Double IPA

This recipe is for 1 gallon. Just multiply all the ingredients by the amount of gallons you want as your final volume.

Color:
12 HCU (~8 SRM)
Bitterness: 105 IBU
OG: 1.091 FG: 1.016
Alcohol: 9.7% v/v (7.6% w/w)
Water: Brita
Grain: 1.5 lb. British pale
Steep: Steep between 140°-150° for 45 minutes pre-boil.
Boil: 60 minutes SG 1.091 1 gallons
6.5 oz. Light dry malt extract
3.25 oz. Amber dry malt extract
6 oz. Corn sugar
6 oz. Honey
Optional: Use gypsum (start of boil) & Irish Moss (last 20 minutes of boil) to help keep the trub at the bottom of your pot during your rack to fermenter.
Hops: .5 oz. Cascade (6.4% AA, 60 min.)
.25 oz. Kent Goldings (4.1% AA, 60 min.)
.25 oz. Cascade (6.4% AA, 45 min.)
.25 oz. Cascade (6.4% AA, 25 min.)
.25 oz. Kent Goldings (4.1% AA, 25 min.)
.25 oz. Cascade (6.4% AA, 5 min.)
.25 oz. Kent Goldings (4.1% AA, 5 min.)
.25 oz. Cascade (aroma)
.25 oz. Kent Goldings (aroma)
Yeast: Red Star Champagne yeast and Brewers yeast.
Log: Dry hopped at start of fermentation and after krausen died down. Dry hopped in bottle with 1 Fuggle whole leaf hop, 1 Cascade pellet hop, and 1 bud. Condition in bottle for at least 2 weeks.
Tasting: Pour through strainer into glass. Smells terrific, tastes even better, and makes you feel even better still!
