BC Celebration Ale

The IBU's may seem a little extreme, but Celebration Ale should be
extreme. Actually, the bitterness is not over-powering, considering
the rich malt flavor. This is a little stronger (alcohol) than Sierra
Nevada's, but I think it's just as good. I may be a little partial,
though.

Bitterness: 81 IBU
OG: 1.075 FG: 1.018
Alcohol: 7.4% v/v (5.8% w/w)
Grain: 9.07 lb. American 2-row
0.96 lb. American crystal 60L
0.47 oz. Dextrine malt (Cara-Pils)
Mash: 65% efficiency
Standard infusion mash at 152 degrees for about 70 mins.
Boil: 75 minutes SG 1.058 6.5 gallons
3.65 lb. Light malt extract
Irish moss added to last 15 mins. of boil.
Hops: 1.6 oz. Chinook (12% AA, 60 min.)
1 oz. Centennial (aroma)
Yeast: We used a 3rd run Wyeast 1056 slurry, which is the best way to get a
quick start, especially on stronger ales.
Log: Brew date: 12/6/98 Primary fermentation: 4 days
Secondary fermentation: 10 days
Tertiary fermentation: 6 days

We did a double dry hop (first time) and it was successful. 1.5 oz.
Cascade leaf in the secondary, and .5 oz. Cascade leaf in the tertiary.
Primary fermentation was at about 72 degrees, while secondary and
tertiary were done at about 65 degrees.
Carbonation: Used just under 3/4 c. corn sugar on 12/26/98 to bottle.
Tasting: 1/1/99- first tasting. Obviously not ready, but who can wait. It is
starting to form a head, and the color, aroma, and flavor are really
exciting. I am going to have a very difficult time leaving this
alone.
