8 lb. British pale
1 lb. Wheat malt
8 oz. Dextrine malt (Cara-Pils)
8 oz. British crystal 50-60L
8 oz. German Munich
Mash: 68% efficiency
Mash in 4 gal water temp. 130 F protein rest 30 min. Raise Temp. 152F for 75 min. Mash out 170F 15 min. Sparge with 5 gal water 170F.
Boil: 60 minutes SG 1.045 7 gallons
Irish Moss 1 tsp added 20 min. boil.
Hops: 1 oz. Nugget (12.5% AA, 60 min.)
1.5 oz. Cascade (6% AA, 30 min.)
2 oz. Cascade (6% AA, 15 min.)
Yeast: Wyeast 1028 London Ale large pack used.
Log: Primary fermintation for 7 days at 66F. Secondary fermintation, dry hopped Kent Golding alpha 5 1oz, for 9 days.
Carbonation: Primed with light DME 208 gms.
