Another "kitchen sink" beer to use up some aging grain.

13 HCU (~9 SRM)
Bitterness: 134 IBU
OG: 1.087 FG: 1.020
Alcohol: 8.7% v/v (6.8% w/w)
Water: Carbon-filtered city water, mildly Burtonized. Acidified our high pH mash and sparge water.
Grain: 5.5 lb. Schreier Special Pale
5.5 lb. Weyermann Pilsner
1 lb. Weyermann Wheat malt
8 oz. Weyermann Carahell
8 oz. Dingeman Crystal 45L
4 lb. Schreier Euro Vienna
Mash: 70% efficiency
Mash at 154°F for 60 minutes. Sparge with 170°F water.
Boil: 120 minutes SG 1.062 7 gallons
One tablespoon rehydrated Irish moss flakes, 15 minutes before end of boil.
Hops: 2 oz. Chinook (13.7% AA, 60 min.)
1 oz. Centennial (10.1% AA, 30 min.)
1 oz. Northern Brewer (6.6% AA, 30 min.)
1 oz. Northern Brewer (6.6% AA, 15 min.)
1 oz. Centennial (10.1% AA, 0 min.)
0.5 oz. Centennial (aroma)
Yeast: White Labs WLP023 Burton Ale
Carbonation: Medium carbonation.
