Canyon Dweller IPA

This is an IPA that was two years in the making. Using the Cascade hops gives this beer a very hoppy mouth feel and is definitely for "Hop Heads"! I hope you enjoy it as much as I do.

Bitterness: 62 IBU

Alcohol: -
Water: 1 tsp gypsum in mash tun
Grain: 18 lb. American 2-row
3 lb. American Munich
2 lb. American crystal 40L
1.5 lb. Raw wheat
Mash: 75% efficiency
156 degrees for 60 minutes
Boil: 90 minutes SG 1.060 11 gallons
2 tablespoons of Irish Moss at 20 minutes
Hops: 3 oz. Cascade (9.3% AA, 60 min.)
1 oz. Cascade (9.3% AA, 30 min.)
1 oz. Kent Goldings (4.75% AA, 30 min.)
2 oz. Kent Goldings (4.75% AA, 15 min.)
Yeast: Wyeast London Ale 1028
Log: 1 week in primary at about 68 degrees
1-2 weeks in secondary at 68 degrees
Should finish around a 1.012 FG
Tasting: Nice balance of hops and malt. Seems to be the favorite of my family and friends.
